Spiced Pear and Hazelnut Croustade

This is an excellent winter treat, with warming, aromatic spices to enliven your spirit on a cold and cloudy day. When I serve this for an afternoon pick-me-up, I also pour piping hot cups of coffee with cardamom; grind the cardamom with your coffee beans before brewing.

MAKES ONE 13-INCH ROUND CROUSTADE

EQUIPMENT: rimless baking sheet, removable bottom from a tart pan

1 Single Pastry Crust dough, prepared through Step 1 only

FOR THE FILLING:

2 pounds D’Anjou pears (about 4 medium), peeled, cored, and each cut into 8 wedges

4 tablespoons evaporated cane juice

1 tablespoon brown rice flour

¾ teaspoon ground cardamom

½ teaspoon ground cinnamon

⅛ teaspoon ground cloves

¾ cup coarsely chopped hazelnuts, divided

1 tablespoon evaporated cane juice
